How is the employee supposed to know what gender the person identifies as? The person looks basically like a he but might have been dressed like a she. The person might identify as they or xe or mx or bfewjk for all the employee knows.
The polite thing to do is to do would be to called the person whatever pronouns s/th/h/m/x/ey like. But to hold up a line and to consume the time of the gate agent to complain about this is absurd. Just move on.
If someone calls me ma'am, I might do a double take or make a face, but I'm not going to get worked up about it. Who cares? Just move on. The agent doesn't have time to make a whole scene over this nonsense. He has other passengers' problems he has to solve.
