Many a cash transaction takes placed that is untaxed as well. Millions of people per day finish mowing a yard and receive cash they don't have to report. A lot of small businesses will give you a cash discount for this very reason. It's not just the wealthy that take advantage of anything possible, it's human nature.

Socialist claim to be different from communist, but when I listen to them discuss ideals I don't often detect any evidence that they see any form of inequality as okay.
Prove me wrong. Show me articles written by socialists who present specific inequalities as something that is okay. Not just "okay for now, we'll attack that later", but "not in any way wrong to have in society".

An interesting point is that even in the most centralized state run economy like the USSR there were accepted inequalities; for example, most Soviet workers were paid a "piece rate" meaning those who produced more got paid more:

Simultaneously it expanded the use of progressive piece-rates that would rise with the increase of individual workers' actual output."
