I make Blackberry and Plum wine. As well as growing Pinot Noir grapes in my garden and making wine from them. The biggest trick to making great wine from almost any fruit is to completely avoid adding water at any stage

Because pure elderbery juice would be pretty strong tasting I think.
My family has been making home made wine every year for the past 30 years and if i have any tips it's this;
Try to find oak barrells, they are very rare and expensive so if you can't, leave a bit of oak in the type of wine you want to make and let it sit there for a week. Then when you ferment the wine in a aluminium barrel put the bit of oak in there.
Make sure everything is sterilised.
Keep the wine simple, the more you mix it with stuff the more it will come out cr@p.
Try to use the natural yeast found on the skin of the grapes. You can wash this off and use artificial yeast but it just don't taste as good and it's more work.
Be very selective which grapes you use. Eg Merlo, Ruby, Cab Sav. Go to a winery and pick a box from them. guranteed succsess!
Try to drink it quick, that way you dont need preservetives so you wont get a huge headache in the morning.
