I ask because, yes, I worked 4 1/2 years in a meat dept at Albertsons, and have watched as the art of butchering vanishes. Most meat cutters these days would have no idea what to do with a side of beef.
No offense intended, but if you're under 45 your probably have no idea of butchering unless you worked in a slaughterhouse. I am not making any presumptions, just wondering what your experience is....

I an 49 and a certified Journeyman Butcher. I have boned out sides and quarters so meat that ain't in a box isn't a problem. 😉
What's the market like out there for your line of work? I have a brother of sorts (who turned me on to RHP, actually) that lives by you in Longmont.

My brother in law used to work at the turkey plant in Longmont. I heard it is shutting down or already shut down.
