This topic has been discussed before, and I still have no real answer to give you. Calling someone a Jewish man is just like calling someone a Christian. But calling someone "a Jew", is demeaning. There is something about ...[text shortened]... beings. I guess it is similar to calling a black man "a nigger".
I have heard many somewhat similar discussions about the use of "autistic person" or "person with autism". While "person with autism" is what's considered PC, most autistic people I know prefer "autistic person", some of them so much so that they will be insulted if you use "person with autism". Others will be insulted if you say "autistic person", or even worse (in their eyes), "autist". I find the whole discussion somewhat ridiculous. If I know what a person prefers, I will use that, but if they haven't told me, there's no way of knowing.
