Pre-boil the fellows to ensure they are fluffy inside and give them a dusting of polenta when you put them in the oven.

Pre-boil in very salty water.
Dry on paper towelling.
Roast in very hot chicken fat with sprigs of Rosemary on top.
Voila!

(Have not tried polenta .... yet!)
