Here's one opening that I like. Gets a pretty solid central position with pawn and open the rook + Queen attack on the f column (after moving B + castle). But everybody told me so far that it's crazy to loose the Knight so early for that.

If this opening is sound then 150 years of chess theory is wrong.
If you must sac your knight in the opening because it's just something you do, then I suggest you sac if for the f7-pawn. This exposes black king very early, get your bishop to c4 attacking f7, get your queen out and try to mate him before he can develop.
Btw, this is the wrong way to play chess but if you have to play like that, sac it on f7.
I take good notice of all your advices and critics, and maybe indeed there a better way to get that Knight out of the way, or maybe it's just too early to do such a "take no prisoners" move.

What if we stop mourning one sec on the corpse of that Knight, couldn't it be seen as a piece development (just to escape that stake part)? Because at the end of the day, I've got 3 pawns solidly developed and Black has only one Knight that is stucked probably for a while in C6.
--> I've develop 3 pieces, I am ready to develop the big ones, I have kind of a solid control of the centre of the board with no pawn really blocking the major pieces development. And i have a plan which is to get in through f7.
So I aint really ignoring the theory neither (open/develop/attack), I am just going there all the way...

If I was playing the black side I would play 5....d5. Black really has no problems at all after that move - both of his bishops can get out easily, he's stopped any attacks on the a2-g8 diagonal (in particular attacks on the always vulnerable f7 square) and he can castle long or short. Black is, quite simply, a piece up and White might as well resign.
If I was playing the black side I would play 5....d5.
White will go e5 and f5 after castling, blocking/taking bishop. As well e5 annoys the black g Knight.
Black really has no problems at all after that move
No they dont...yet, they just have nothing developed and three pawns to annoy their (pawns at least) development.
Play normal chess
