If you want solid play with exciting chances and initiative, I recommend:
Against 1. e4 The french. The french is very thematic making it unnecessary to memorize many lines. Breaks at c5 and f6 are about it. Just don't get trapped into passive play.
Against 1. d4 I suggest the nimzo-indian. No gambit play, just soli and straightforward development.
As white I suggest the english or Reti both of which are very solid and offer many chances to outplay your opponent without reams of memorization.
Against 1.e4 you can also play scandinavian. Some variations look alot of the ones from caro-khan. So it is easy to learn them if you already know the caro.
Against 1.d4 the nimzo-indian, or any other indian is fine.
And with the white pieces my first 2 moves are always 1.d4 2.c4, and it doesn't matter what black plays on his first move
