A person who was biologically immortal wouldn't age or die of disease... but could still be killed.
I mean in fiction vampires are often described as being immortal despite the fact that they can be killed.
So souls could have the potential to exist forever, while still being capable of being destroyed.
The major problem is that in fact souls don't actually exist.
