Many years ago I was married to a Mexican lady. She introduced me to Menudo (Cow intestines) and burritos from cow tongues.
There are 4 types of tripe corresponding to the 4 stomaches of a beef. Most Hispanics around here use the cheek meat barbacoa or carne asada for tacos
