Fat Free Muffins
This recipe was originally adapted from a cookbook but I have changed it so much that I claim it as my own now.
Makes 24
2 cups Rolled oats
2 cups wholemeal flour
1 cup unprocessed bran flakes
1/2 cup currants (sultana, are also good same quanity)
2 tbsp Mixed peel
375g Dried figs, chopped
1 tbsp Baking powder
1 tbsp Bi-carb soda
1 200g jar of apple sauce, for those not in australia pureed apples is a subsitute
1 large Banana, thinly sliced
2 tbsp (heaped) Natural yoghurt
2 cups Skim milk
Extra milk if required
Optional 1/2 cup nuts (Pecans, Almonds, Macadamia)
Method
1. Preheat oven to 200 Celcius
2. In one bowl mix oats, bran, currants, flour, nuts (if used), baking powder, bicarb soda, mixed peel.
3. In a separate bowl mix the yoghurt, banana, figs, milk, apple sauce.
4. Pour wet mixture into the flour mixture. Mix together.
5. Put mixture into muffin tins.
6. Bake for 20 minutes.

Lately I've been into marinating (thinly sliced) chicken breast with olive oil, garlic, red chillies,lemon(any citrus),rosemary,black pepper and the same ingriedients (without lemon) in different proportions ie much more pepper less garlic, chillies on the medallion steak, marinate for as long as possible...longer the better, whilst preparing cover and mix some Quality toms,mushrooms,mixed peppers, in the marinade of your choice,and place in a glass serving dish,cook for at least 2 hours,whilst preparing the rest. Then to the salsa,
Can of quality plum toms (Napoltena)
Garlic
Red chillie
1 red onion finely sliced
1/2 red pepper, add any colour if wanted
Zest of lime
Oregano
Then GeorgeForeman-ate all the chicken/steak,when cooked place in covered serving dish at the bottom of the oven,then dry pan fry some flour tortilla wraps 8 seconds each side
Serve with the cooked marinated vegetables and crisp leaf salad, mmmmmmmmmmmmmm lovely. Good for big groups.
