I've eaten gubment cheese and personally I think it's excellent. The gubment cheese I've eaten comes in big 2 to 5 pound blocks and tastes somewhere between white American and Velveeta. If I had access to some gubment cheese right now, I'd use it to make some badass queso dip.

They aren't actually great fans of cheese. Peanut butter, chocolate, anything sticky works best for me, although I've seen people get great results with no bait at all. So long as you put the trap in the right place (along the wall) the mouse will eventually walk into it.
