Well covered is my polite way of saying that they are carrying a bit more weight. Partly down to the fast food outlets I think.
A more vulgar phrase here is having 'more junk in the trunk'. Doesn't make much sense to Europeans until one realizes that in the US, a 'trunk' on a car is the same as the 'boot'. In the US, a 'boot' is a wheel clamp, designed to keep the car from being driven.

In the US our diet is heavily influenced by how we feed our livestock to fatten them up.
Most obesity in the US is down to portion control, or the lack of it. Granted, if you eat nothing but Big Macs, you're going to have health issues. But you also don't need to eat two or three of them, along with a shed load of fries.

On the black bums note, the phrase once you go black you never go back comes to mind 😂 great bums generally but not a fan of the Afro style hair, a lot of them shave and use wigs which I find interesting.
