The answer is that the influence of Christianity on western culture is far-reaching and pervasive. The British national anthem is "God Save the Queen," for instance.
Countries wanted to believe that their country was blessed by God or providence.
Of course, what you are probably asking is why hasn't it been changed?

Because of the use of the word "god" as opposed to "Allah" does that exclude muslims?
Like the royal family, the anthem is vestigal.
The US has been moving in that direction for some time...I'm sure we'll remove references to God on our money sometime in the not too distant future.
