I usually add about a half cup of cream cheese and some sour cream after the butter, for cottage pie mash.
The eggs area must, too.

Just beat in whole egg - it will make it nice and fluffy, or separate and fold in egg whites for REAL fluffiness.
The yolks help give the mash a nice golden brown colour.

tbh i just see it as adding more fat for little impact on the flavor. especially if you're adding the whites.
