Place about 5 medium tomatoes,
and 3 crushed cloves of garlic
in a toaster oven on high heat (450),
Drizzle with olive oil and bake for about 30 min or until brownish.
The tomatoes with look squished.
Add salt, finely chopped culantro, black pepper and hot pepper (jalapenos or habaneros) to taste. If culantro is not available use cilantro.
Crush all together with a potato masher or a hand mixer.
You can spread the mixture on toasted garlic bread if you dont have sada roti. Toasted pita bread is a decent substitute as well. You can get sada roti at most West Indian restaurants in big cities. Sada roti is not hard to make but you need a rolling pin and a bit of skill.
