Seriously, that is a great idea for a course. Botanical trips haven't been part of my formal education since junior high school, which is unfortunate.
Right now, I'm officeless, so when the library is closed I usually work under various trees on campus, and the variety of plants is very large, so I have my ideal job.
Better than linen-testing would be mattress-testing, or perhaps bed-testing in general, since it encompasses both. It would be better to be Senior Bed Tester, though, so that the really bad beds would have already been rejected by those in a lower pay grade.
