I think a golden rule is emerging with regards to food and all of this Atkins diet stuff and the like, if a modern man (or woman) has had something to do with its creation, it is probably bad for our digestion.
All foods we eat have been modified by modern humans. No exceptions, unless you shoot your own meat from wild, not released, animals (so no rabbits in England, bubba, and certainly no sheep) and forage your own wild vegetables (so no beetroots for you, just sea beets - and certainly nothing that could possibly be called a "staple".)
To eat healthily, the most important rule is: stop worriting about it, already - fretting is bad for your health. The second most important command is to eat varied food that you (or your family, or friends) cook yourself. And that means cook, not re-heat or microwave. The third rule is not to over-do anything, whether it be quantity or keeping to the rules. That's all the dietary rules you need to stay healthy, unless you have some specific illness already.
