Au contraire,

e5 is a fairly disastrous move.
After something like
1...e5 2. Bg5 Qe6 3. dxe5 Nxe5 4. 0-0 Bd6 5. Nxe5 Bxe5 6. Re1

White has utter control of the critically open d and e files, his king is safe, and still Black has to try to get out of his predicament with the pinned Bishop, in front of the nearly pinned queen. He can castle short side now, but the bishop is still pinned, and the only way to get out of the predicament is to play f6 and so weakening the pawn structure in front of the king. The black light bishop and queen are nicely poised to put pressure on the focal point f7 as well.

All in all, e5 is a losing move.

Yes.

White threatens 1. Bg5, winning the Black Queen. Black can counter this threat in five possible ways:

a...h6
b...g6(or g5)
c...Qe7
d...Qd8 or
e...e5.

Yes, as good a plan as any.

But I was asking only for a move which gets Black out of immediate danger. Not the best one. Any of Black's alternatives (above) accomplishes this.

You didn't, actually. You asked what would be a good move. I reckon only two moves qualify and only h6 is really feasible.
