I think a part of the explanation is also that amateurs also play for a win in a position they should only try to hold. I have done it a lot of times myself, playing with more than you have, ending up losing.
I also think a part of the explanation is that masters have an ability to "pull the brakes" when things start going bad, so rather than intensify a battle, evening it out.
