It's usually used as the konstant 😉 in proportion equations the way I learned them. C is probably not a good choice for a constant, as it is already taken by the speed of light.
A good ol Engineering, not no math stuff. I'll use the same arguement, k is not good since its taking already for:

In the appendix, it clearly states:
k specific heat ratio
k Boltzmann constant
K equilibrium constant
K is used for a constant yes, but C is used more. Anyways whatever.
