after Nc3 black capturing dxe5 doesn't pose a threat, as the e5 can't advance to e4 threatening the knight, because the other knight on c3 controls e4 square. white can simply ignore and continue developing Nf3-e4-Bc4 for examble and there's not a thing black can do about it. after white castles the rook is on a semi-open file targetting f7 together with the bishop, the f3 knight ready to join them.
