I like the German word for knight; SPRINGER. It has a nice ring to it and describes the knight beautifully. Just when everything looks under control, up pops the knight. And in the end game he has versatility the bishop hasn't. And in a tight congested position, he is often the only piece that is able to penetrate the enemy army. My obvious vote is for the SPRINGER...........!

Anyway knights are much stronger in the middlegame of queenpawn-opening games, which are so closed and the best way to move is "jump" from one square to another...
Any piece can be deadly in the right hands and in the right position, you have to know which piece will be the most effective in any given situation.
On an open board I would take bishops over knights any day of the week.
In the middle game, in a cramped position, the knight can be the most effective piece on the board.
