White should play 8. g5 rather than 8. b8=Q which loses a tempo. 7. g5 is also OK.
However, your suggestion of 6. g5 would allow Black to queen with check.
For the 2nd variation there is a pawn race between the White b-pawn and the Black a-pawn, which White would win with check if Black didn't move his king.
1. d5 cxd5
2. a5 bxa5
3. b5 axb5
4. cxb5 Ke7 (because Black will lose the pawn race)
5. b6 Kd7
and a White king side pawn queens.
In general,
if Black answers 1. d5 with exd5 White plays 2. exd5
if Black answers 1. d5 with cxd5 White plays 2. a5 (if 2. exd5 then 2...Kf7 draws).
