Do the Gospels detail every act Jesus carried out?

Why is it that Jesus did not save a homosexual from getting executed by stoning?
Is it your assertion that, if it had been a homosexual in the biblical account, Jesus would have allowed the stoning to go ahead? - Is that the Jesus you know and love?!

If Jesus had prevented the stoning, would that mean homosexuality is not sinful?

Can anyone supply book and verse to support the idea that Jesus declares homosexuality is no longer no longer sinful.
The fact that Jesus doesn't explicitly declare that "homosexuality is no longer no longer sinful" is neither here nor there. Homophobes take it as some sort of "proof" - as illogical is it is. Non-homophobes do not.
Just as supporters of slavery would similarly take as some sort of "proof" the fact that Jesus doesn't explicitly declare that slavery is sinful. Non-supporters of slavery do not.
The fact of the matter is that for those guided by the spirit of truth, both homosexuality and slavery are addressed by the following wherein Jesus defines the "law and the prophets" and therefore what is and isn't sin.
Matthew 7
12“In everything, therefore, treat people the same way you want them to treat you, for this is the Law and the Prophets.
Matthew 22
37And He said to him, “ ‘YOU SHALL LOVE THE LORD YOUR GOD WITH ALL YOUR HEART, AND WITH ALL YOUR SOUL, AND WITH ALL YOUR MIND.’ 38“This is the great and foremost commandment. 39“The second is like it, ‘YOU SHALL LOVE YOUR NEIGHBOR AS YOURSELF.’ 40“On these two commandments depend the whole Law and the Prophets.”
He who has ears, let him hear.

Is a person who likes to go party and have one night stands sexually immoral?
You also admit that the New Testament in no place says homosexuality is not a sin.

The same logic that says homosexuality is no longer sinful can be applied to many other of the sexual restrictions put forth by God the Father, Jesus and the Holy Ghost found in the OT.

You link slavery to homosexuality. Does God instruct that you must own slaves? God does say that homosexuality is an abomination. So when does God's views on what is an abomination change?
