Another vote for cheddar. I do like it sharp.

Parmesian is also very good - I do like a bit of marinara with it.

Mine is of course English cheddar, preferably from Cheddar in Somerset. However there are some wonderful examples from all over the UK available in the supermarkets. I get very disappointed with soft cheese and even more so when a restaurant describes it cheeseboard as "as selection of fine English cheeses" and there is not a decent piece of cheddar in sight.

All cheese is good! It just depends on how or in what it is prepared.
However, if you are just going to have some with water biscuits/crackers you cant beat a good Neufchâtel.
