I mean, you could do some roasted carrots and potatoes as well... I'd say make some gravy, but bless, you folks over there have funny ideas about gravy...

I understand but if people want to eat meat, someone's got to kill and dress it. Having worked in the meat business myself but not kill floor I was able to handle it. I've seen kill floor action many times, not my cup of tea. IMO veal and froi gras or whatever fatted good liver is called is inhumane. Both are put so they can't move, geese have a funnel inserted in the throat for force feeding. Calves are separated from their cow, penned up tight, so they can't run off fat, so the muscles don't develop normally. To me that's unconscionable.
For the most part and normally, the slaughter technique is pretty humane
The animal is stunned, basically brain dead, by a captive bolt gun or electrodes (mostly pork) then the unconscious animal's throat is cut. If the animal felt pain, I'd think it's only a flash. IMO veal must look forward to the kill line.
Now "religious slaughter," how Jews and Muslems do it is totally inhumane.
They don't knock or stun, so a fully aware animal dies hanging by.one leg with their throats slit bleeding to death.
But yeah, glad I just removed bones from carcasses.
