- you learn how important flavour and texture are
- you learn how to maintain balance, even with contrasting flavours
- almost anything can go into a salad, so you can experiment
- it's essentially assembling ingredients, so it's simple and the failure rate is low
- the enjoyment you get from creating a great tasting salad is high
Also, I haven't poisoned anyone since the last time I made raw chicken salad with salmonella sauce. 😀
