What does me not being God have to do with anything? On what grounds should I - admittedly not God - not be able to turn water into wine?

Yeah you said that. I was saying that if Jesus/God made the wine then it would not contain the taste imperfections that are seen in man-made wines.Extract and measure the chemical composition (probably using NMR). That's how you could tell the difference.
