I don't recall ever meeting a healthy-looking vegetarian who didn't pop loads of vitamin/mineral supplements.
Many vitamins come from plants that we are unable to digest.
Herbivorous animals absorb the vitamins when they eat, and we absorb the vitamins by eating the herbivores.

There are two sorts of vegetarians, as far as I can tell.
Type 1: Doesn't eat animals because the thought is disgusting
Type 2: Doesn't eat animals because of pity for the animals.
A long time ago I catagorised the problem as:
They don't want me to eat cows, because they feel sorry for the poor animals.
I don't want them nagging at me for eating cows.
So I came to the conclusion: Let's eat the vegetarians.
This way the cows don't need to be eaten (so the vegetarians are happy), I don't have to listen to vegetarians whining all day (I'm happy) and I still get to eat meat (me and the cows are happy).
So the vegetarians are happy, the cows are happy and I'm happy.
C'est le ton qui fait la musique....I buy my steak from a butcher whose family owns a farm. He rears, kills and butchers the the meat himself. When I eat one of his steaks, I know it was attached to a bullock in the field next to my kids school the previous day.

I am (also) vegetarian because
1. I prefer to eat stuff that is low in the chain of evolution
2. It helps to solve the shortage of food in the world
3. It is healthier
4. It is tastier
5. It is cheaper
