Coleslaw my firend is a game that basically involves grated carrot and salt.
Ingredients:

Finely chopped onion(or grated or if you're a chancer, roughly chopped) . Approx. a quater of the final mass.

Shredded cabbage. Go wild. Approx. a half of the totallity of your slaw.

Grated carrot. Although after you've made the previous ratios you're kind o' stuck with your fractions, you can't put enough carrot in (98% carrot-crazy-coleslaw has been tested by the Russian Space Agency, and we all remember the Cold-War(Slaw)!)

Then a decent mayonaise (no idea of USA mayo but European brands such as Heinz, Helmans or Vitakrone are amazing in any salad enviroment), a little less than the same amount of other ingredients and salt and pepper to taste. You must mix everything well or else the resultant mouthfulls might be a shock.

When in doubt, I'd usually fall back on my boy, Emeril. BTW, I usually think of coleslaw as a side dish for BBQ as in:

rather than a component in a sandwich or some such, as in:

I can't think of any reason why you couldn't use pineapple juice instead of lemon. It does kind of sound like it would kick it up a bit.

Coleslaw is easy, and I can't figure out where you guys are getting all the chopping from.

All you need is white cabbage, mayo and carrot. Grate the carrots and cabbage, and mix with a small amount of mayo. Enjoy.

Any other flavours should be got from the other items you eat with your coleslaw, IMO.

shred some cabbage, add a little red for color, and some very thin julienne carrots. add miracle wip salt and cracked pepper to taste, and horse radish to taste.

Yes, but... isn't that better done with real chunks of pineapple in the mix, rather than a sprinkle of juice?
