I am in Edinburgh at the moment with the Scottish side of the family.
It went very well indeed, the Scottish can be a tough audience to cook for.

Have you tried Haggis (Haggis, neeps and tatties)?

It is served with potatoes and suede and served as hot as you can get it without burning it.

It is quite simple to make if you have a decent butcher around, the traditional recipe uses sheep stomach as the bag to boil it in and then discarded afterwards (the dog loves that bit).

If you want to try a bit of a veggie dish that goes really well with mashed potato and suede, then try Glamorgan sausage.

It is one of the tastiest things I have had.

The Welsh probably wouldn't do well with Haggis.
The main dish I believe down there is the traditional Sunday roast with boiled vegetables and gravy (an easy dish for the veggie to convert by substituting the roast with extra roasted vegetables).
While laverbread (Seaweed bread) or rarebit (magic cheese on toast) are considered a few of the national dishes, I think these days the cooked dinner has become the norm.

If you ever plan doing a whistle stop tour of the UK give me a shout and I will be your guide (I can do The north, south and west, the peoples in the east and the middle bit are icky so we stay away from them).

Christmas in the highlands of Scotland or Wales has to be experienced.

May 10 Entry: RHP seems to be many things... a global community center, a chess fraternity house, a playground with numerous

sandboxes, a gathering of children trying to share their invisible toys and play nice with the other invisible children. Also beginning

to seem a lot like a wide and long parade that I'm privileged to be marching in... even though at times marching in quite the wrong

direction, against the grain and jostling a few shoulders along the way. Marinated Garlic Chipotle Salmon (Seitse Style) for dinner

this evening. Sort of RHP Parade appropriate since these guys also find themselves instinctively swimming for keeps upstream.
