Provolone, is that even a word?
It's Italian. It has the consistency of swiss only it is quite tangy and can make you thirsty. It's not one of my favorites.
Like swiss, it can be an eating cheese, or sliced for sandwiches.
very popular in Italian sandwiches - salami, prosciutto (hot ham), provolone.
It is also one of the best melting cheeses, too.
