1...h5 works quite well in OTB chess. Most people don't prepare against h5 for some reason so you throw your opponent off any opening preparation and hence get a psychological edge.

There are a lot of opening that give away the center at first. If you don't control the center it doesn't mean the game is over.

look at the Caro-Kann for example...
1. e4 c6
black gives way to the center to set up a move two strike with
2. d4 d5
your line:
1. e4 h5?
2. d4 h4?
3. h3 c6
and white is essentially playing a Caro-Kann with down an extra tempo
black already has to deal with white having more tempi in the regular Caro-Kann, let alone just giving him one more...
horrible line...

take up the caro-kann
you will find your game much easier when you aren't down an unnecessary tempo...
