If White takes the knight his king will become critically exposed to checks from Black's queen and bishop (and rooks, if it wanders to e1!)
8. ... Bc4+
9. Ne2!
This is important - White needs to make himself a shield to hide behind, if he runs to e1 straight away he'll get mated.
9. ... Bxe2+
10. Ke1!
And that's that.
Edit: In the line I originally gave, Black can play 3. ... Bxg5, so White should leave Black's king on g7 and play the rook sac first:
1. Nxg7 Kxg7
2. Rxf4!
Now 2. ... Bxg5 fails to 3. Qxg5+
2. ... exf4
3. Qh6+ Kg8
etc.
if 3. ... Kh8
then 4. Qxf8 is mate. It took me several minutes to see that!
